History & Tradition

  • Barbecue (Khorovats) is an essential pillar of Armenian culture. The tradition of serving an assortment comes from large, hospitable families aiming to satisfy every guest's preference. The meat is pre-marinated with unique natural spices, and then skilled grill masters (manghalchis) cook it to perfection, ensuring each cut remains exceptionally succulent and smoky.

How It’s Served

  • The set is presented on a grand platter lined with fresh lavash bread, which soaks up all the flavorful juices from the hot meat. It is garnished with grilled vegetables (tomatoes, peppers, eggplants), sliced onions, and fresh herbs. The dish is traditionally accompanied by Armenian tomato sauce (adjika) and sumac for an extra zest.
