  • Chechil cheese is one of the culinary symbols of the Shirak region, particularly Gyumri. This salad reflects the simplicity and quality of Armenian rural life, where fresh vegetables from the fields were paired with homemade cheese to create a quick and nutritious meal.

How It’s Served

  • The salad is typically served with plenty of fresh herbs (purple basil, cilantro) and dressed with olive oil or its own natural juices. The cheese is hand-shredded over the vegetables, and it is always accompanied by fresh Armenian lavash or tandoor bread.
